Goat Cheese Polenta (Side Dish) No ratings yet Print Rate Total Time: 30 minutes minutes Servings: 4 Ingredients1 teaspoon salt2 tablespoons butter1 cup yellow cornmeal4 ½ - 4 ¾ cups vegetable broth (you can also use water)4 ounces goat cheese InstructionsIn a medium pot, bring 4 ½ cups of broth or water to a boil. Slowly add cornmeal, and whisk constantly to avoid getting clumps. If you do get some clumps, don’t worry….it will still taste delicious!Reduce heat and simmer. Cook for 15 minutes. If it looks too thick, add a tablespoon of extra water or broth to think it out a bit.When the polenta is done, stir in the salt, butter and goat cheese.
