Adding goat cheese to polenta is like adding more angels in heaven.....just makes a great thing even better!

Ingredients

  • 1 teaspoon  salt
  • 2 tablespoons  butter
  • 1 cup  yellow cornmeal
  • 4 ½ - 4 ¾  cups  vegetable broth  (you can also use water)
  • 4 ounces  goat cheese

Instructions

  • In a medium pot, bring 4 ½ cups of broth or water to a boil. Slowly add cornmeal, and whisk constantly to avoid getting clumps. If you do get some clumps, don’t worry….it will still taste delicious!
  • Reduce heat and simmer. Cook for 15 minutes. If it looks too thick, add a tablespoon of extra water or broth to think it out a bit.
  • When the polenta is done, stir in the salt, butter and goat cheese. Check the seasonings and add more salt if you’d like.
