Adding goat cheese to polenta is like adding more angels in heaven.....just makes a great thing even better!
Ingredients
- 1 teaspoon salt
- 2 tablespoons butter
- 1 cup yellow cornmeal
- 4 ½ - 4 ¾ cups vegetable broth (you can also use water)
- 4 ounces goat cheese
Instructions

2 tablespoons butter
4 ounces goat cheese
In a medium pot, bring 4 ½ cups of broth or water to a boil. Slowly add cornmeal, and whisk constantly to avoid getting clumps. If you do get some clumps, don’t worry….it will still taste delicious!
Reduce heat and simmer. Cook for 15 minutes. If it looks too thick, add a tablespoon of extra water or broth to think it out a bit.
When the polenta is done, stir in the salt, butter and goat cheese. Check the seasonings and add more salt if you’d like.
