I always keep the ingredients for this quick and easy appetizer on hand because 1. it's easy 2. it's a crowd pleasure. Brie is topped with spiced walnuts and sweet fig preserves than wrapped in puff pastry and baked until the pastry turns golden brown. The brie is not quite melty, but gooey enough to spread generously on your favorite crackers.
- 1 large round of brie
- ½ jar of fig preserves (I highly recommend Adriatic fig spread. You can also use honey)
- 1 sheet frozen puff pastry, thawed
- 1 cup walnuts
- ¼ cup brown sugar
- ½ teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- 1 egg, lightly beaten
- Baguette, sliced
Preheat oven to 375 degrees.
Cover a sheet pan with parchment paper. Lay the thawed puff pastry on top of the parchment paper and place the Brie in the center. In a small saucepan, melt the butter with the brown sugar and add the walnuts. Stirring frequently, sauté the walnuts until they are golden brown and caramelized with the sugar, about 5 minutes. Add the cinnamon and sauté for another minute or two.
Spoon the fig spread (or honey) over the Brie, making sure to spread it evenly over the top, then top with half the walnut mixture and wrap with the puff pastry. To wrap the Brie, take the puff pastry at its four edges, pulling them gently so they gather at the top of the Brie. Press the edges of the puff pastry against the Brie, then twist the top and press down on top of the Brie. You want to make sure the puff pastry completely covers the Brie. Don’t worry if it doesn’t look pretty or perfect – it will when you take it out of the oven!
Brush the beaten egg over the entire puff pastry covered Brie, then bake for about 15 -20 minutes until the pastry is golden brown.
Remove from sheet pan and place on a platter, sprinkle the remaining walnuts around the Brie and serve with crackers or toasted baguette slices.
