Beer Can Chicken, Grilled Corn Salad with Hazelnuts, Pecorino and Mint

Did you buy too much beer for your last cookout? I have just the recipe for you! Take one can, take a spiced rubbed chicken, stick it on top of the can and put on your grill. Moist, flavorful and finger licking good chicken just a grill away! The corn salad has grilled corn, crunchy hazelnuts, salty cheese and the freshness of mint.

  • 1 can light lager beer
  • One 4 lb. whole chicken
  • 2-3 tablespoons Spice Rub
  • SPICE RUB:
  • 5 tablespoons kosher salt
  • 4 tablespoons light brown sugar
  • 3 tablespoons paprika
  • 1 tablespoon cayenne pepper
