Classic New Orleans Gumbo

With a slow cooked roux and gumbo file powder flavoring the shrimp, crabmeat, and andouille sausage, this gumbo is an authentic creole meal.

Ingredients


  • 1/2 cup all-purpose flour
  • 1/3 cup bacon drippings
  • 1/2 cup coarsely chopped celery
  • 1/2 large onion, coarsely chopped
  • 1/2 large green bell pepper, coarsely chopped
  • 2 cloves garlic, minced
  • 1/2 pound andouille sausage, sliced
  • 1 1/2 quarts water
  • 3 cubes beef bouillon
  • 1/2 tablespoon white sugar
  • salt to taste
  • 1 tablespoon hot pepper sauce
  • 1/2 teaspoon Cajun seasoning blend
  • 2 bay leaves
  • 1/2 teaspoon dried thyme leaves
  • 1/2 (14.5 ounce) can stewed tomatoes
  • 1/2 (3 ounce) can tomato sauce
  • 1 teaspoon gumbo file powder
  • 1 tablespoon bacon drippings
  • 1(10 ounce) package frozen cut okra, thawed
  • 1 tablespoon distilled white vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon gumbo file powder
  • 1/2 pound lump crabmeat
  • 1 1/2 pounds uncooked medium shrimp, peeled and deveined
