Caramel Apple Slices

Caramel apples are one of my favorite things to eat at the fair, and I have fond memories of them lined up on the snack table at Halloween parties at school.  My kids love them, too, but have a hard time finishing an entire caramel apple.  These slices are the perfect bite, easy to make with all the flavor of a traditional apple, but much easier to make (and eat!).

Serves: 8 Total Time: 30 minutes

Ingredients

  • 4 apples (pick your favorite snack apple)
  • lollipop sticks
  • melting chocolate (Ghiradelli if you can find it)
  • caramel (I LOVE the salted caramel from Trader Joe's)
  • Toppings: orange and black sprinkles, slivered almonds, toasted macadamia nuts, coconut etc.

Instructions

1

Wash & slice your apples. Slice them, from side to side, on the thick side, 1/2 inch to 1 inch - so they don't split when you put them on the lollipop stick. You should get about 4 slices per apple, depending on the size of the apple. Remove the seeds, and, with a small paring knife, cut a small slit in the bottom of each slice. Insert the lollipop stick in the slit, & pat the apple slices dry. It's really important to pat them dry so the chocolate doesn't slide off into a mucky mess. Trust me on this one.

2

Lay the apples on a parchment covered baking sheet. Cover each apple slice in melted chocolate, and continue this process until all of your apples are covered in chocolate and have hardened.

3

Then drizzle the caramel & other toppings on top of your apple slices.

4

Let harden & enjoy!

Notes

Make these the day before & leave in your fridge on wax paper until you need them the next day.
