Charred Corn and Grilled Shrimp Chopped Salad with Lime Dressing

This cool refreshing salad makes the perfect main dish for a hot summer night.  It's a fun riff on a traditional chopped salad with loads of grill flavor thanks to the charred corn and shrimp.

Charred Corn and Grilled Shrimp Chopped Salad with Lime Dressing

Ingredients


  • 6 ears Grilled Corn
  • 1/4 cup olive oil
  • 12 ounces large (21-24 count) fresh shrimp, peeled and deveined
  • 4 pickled jalapeños, drained and sliced
  • 1 large ripe Hass avocado, peeled, pitted and finely diced
  • 2 ripe Heirloom tomatoes, seeded and finely diced
  • 3 tablespoons fresh lime juice
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons honey
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup fresh cilantro leaves
  • 2 cups coarsely chopped lettuce (use whatever you like the best: Spring Mix, Romaine, Red Leaf – or a combination of your favorite lettuces)
  • 1/2 cup coarsely crushed tortilla chips
