Chiles Rellenos

There is nothing more tasty than a roasted chili pepper (without the seeds of course) to get your taste buds jumping. This is definitely a Mexican version of comfort food. It's topped with a simple tomato salsa for an added zing of flavor.

Chiles Rellenos

  • 4 or 5 large Roma Tomatoes
  • 1 small onion diced
  • 2 teaspoons fresh diced garlic
  • 1 teaspoon fresh squeezed lime juice
  • salt to taste
  • For the Chiles Rellenos:
  • 4 large poblano peppers
  • 1 small packet (8 oz) cheese of your choice (Monterey Jack is recommened)
  • 4 large eggs
  • 1 cup vegetable oil
  • salt to taste
