A little sparkly and a whole lot of refreshing makes this a gin lover's dream drink. I love a gin and tonic (it's totally my go to drink when the warm weather arrives), and this is along the same lines. A splash of Prosecco adds fizz and an extra special festive touch.
- 1 English hothouse cucumber
- 4 ounces small batch gin (I love using a cucumber forward gin, like Oola, Hendrick's or Nolet's)
- 2 ounces simple syrup
- 16 ounces dry Prosecco
- Club soda
- SIMPLE SYRUP:
- 1 cup water
- 1 cup granulated sugar
Using a vegetable peeler, shave 12 long, thin ribbons from cucumber; set aside.
Cut a 6" piece from remaining cucumber and cut into small pieces.
Muddle in a cocktail shaker, then add gin and cooled simple syrup (be sure it's not hot!) and fill shaker with ice.
Cover and shake vigorously until outside of shaker is frosty, about 30 seconds.
Strain mixture into 4 ice-filled rocks glasses or large wine glasses. T
Top each with 4 oz. Prosecco and a splash of club soda.
Gently stir together; garnish each with 3 cucumber ribbons.
TO MAKE THE SIMPLE SYRUP:
In a glass measuring cup, add the water.
Place in a microwave and heat until the water starts to boil. You can also use a tea kettle on the stove.
Carefully remove measuring glass, and add the sugar.
Whisk the sugar into the water until it completely dissolves.
Set aside to cool.
