Spaghetti Squash with Marinara Sauce

If you're watching your carb intake, spaghetti squash is a tasty substitute when you're missing pasta.  If you don't have time to make your own marinara sauce, use your favorite jarred sauce instead.

Spaghetti Squash with Marinara Sauce

Serves: 4 Total Time: 1 hour (if you make squash and sauce at the same time)


  • 2 whole spaghetti squash
  • 1/4 cup extra-virgin olive oil
  • Gray salt and freshly ground black pepper
  • Marinara Sauce:
  • 1/4 cup extra virgin olive oil
  • 1 28 ounce can of San Marzano tomatoes
  • 4 cloves of garlic, thinly sliced
  • Salt
  • Pepper
  • Parmesan Cheese
  • Basil, thinly sliced
