Power Packed Protein Balls

These little nuggets of goodness pack a serious power punch thanks to flax seed, chia seed and almond butter. A perfect on the go breakfast or afternoon snack, these will give you an energy bump to "power" you through the day.

Ingredients

  • 1 1/4 cups rolled oats — you can also swap quick oats or a blend of half quick, half old fashioned
  • 2 tablespoons chia seeds
  • 2 tablespoons flaxseeds
  • 2 tablespoons hemp seeds
  • 1/2 cup nut butter -- use whatever you have on hand -- I love almond butter, but peanut, cashew or mixed butter would all work
  • 1/3 cup honey -- you can also use maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon kosher salt -- or if you like crunchy bits of salt use Maldon salt
  • 1/2 cup chocolate chips

Instructions

  • With a wooden spoon mix all the ingredients together in a large bowl. You want the consistency to be firm and all the ingredients to easily stick together. If you try forming a ball and it all keeps falling apart, add more nut butter and honey. If the consistency is too wet, add a spoonful or two of oats. A trick I like to use is to put the whole bowl in the fridge for 30 minutes to firm things up. This will make it much easier to form into balls.
  • Once the mixture holds together, use your hands to form balls (roll a spoonful of the mixture between your palms is if you were making meatballs).
  • Store the power balls in your fridge.
