Grilling kale gives it a bit of a smokey flavor which pairs really well with the salty bacon. The lemon adds brightness making this a great side dish.
Ingredients
- 1 pound kale, leaves only
- 2 tablespoons extra-virgin olive oil
- 1 large garlic clove, thinly sliced
- Large pinch of red chili pepper
- Salt
- Freshly ground pepper
- 2 thick slices of bacon, cut into 1/3-inch pieces
- 1 tablespoon extra-virgin olive oil
- Finely grated zest of 1 lemon
- 1 tablespoon fresh lemon juice
