Roasted broccoli is enhanced with garlic making it the perfect, easy side dish! And it goes with ALL your main dishes -- chicken, meat, fish, serve it over rice or on top of pasta.
- Salt and pepper to taste
- 1 head of broccoli, cut into large chunks, large bottom stem discarded
- 2 -3 garlic cloves, thinly sliced
- 4 tablespoons of olive oil
- lemon juice
Preheat oven to 425 degrees. Place broccoli on a sheet pan and sprinkle garlic, and salt and pepper over the top. Toss with the olive oil, so the broccoli is well coated. Roast until the broccoli just starts to lightly brown, about 20 – 25 minutes. Keep on eye to make sure the garlic doesn’t burn.
Remove from oven and toss with a squeeze of lemon juice.
