Taco Soup

Feel like tacos tonight? Maybe the rest of the family feels like chili? Time to make taco soup! It's the best of both worlds......and can be on the table in under 30 minutes!

Ingredients

  • 2 lbs.  ground beef
  • 1 medium  onion, chopped
  • 1 can black beans
  • 1 can hot (spicy) chili beans
  • 1  can Rotel Tomatoes  (or any brand of diced tomatoes and green chilies)
  • 1 can whole kernel corn
  • 1 cup  sour cream
  • 1 package  taco seasoning mix
  • 1 package  Ranch dressing mix
  • 1 teaspoon  cumin
  • 1 cup  water
  • Zest and juice of 1 lime
  • Garnishes
  • Shredded cheddar cheese
  • Fritos
  • Lime slices
  • Avocado slices

Instructions

  • In a Dutch oven, or large pot, over medium high heat, brown meat and onion.
  • When the meat is fully cooked, drain off the fat. Add remaining 9 ingredients (do not drain any of the cans - just pour them in). Stir to combine and cook until heated through.
  • Serve with shredded cheddar cheese, Fritos, fresh lime slices, and avocado slices for toppings.
