Kodiak Pancake Recipe

Ingredients

  • 1 cup Kodiak Buttermilk pancake mix
  • 3/4 - 1 cup whole milk
  • 1 egg
  • 1/2 banana , mashed really well and as smooth as you can get it
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • butter
  • warm syrup
  • blueberries

Instructions

  • In a medium bowl, combine Kodiak mix, milk, egg, banana, cinnamon and cardamom. Use a whisk to mix everything together until combined.
  • A note about the milk. Start with 3/4 cup and if you want the batter thinner, add another 1/4 milk. The thinner the batter the lighter the pancakes will be.
  • Heat a griddle over medium heat, and melt butter. I like to add about a tablespoon per batch.
  • Ladle batter on the skillet in whatever size pancakes you like. Cook until bubbles form on the top, then flip and cook a couple more minutes on the other side. You'll notice both sides get lovely and golden brown.
  • Serve immediately with warm syrup and topped with blueberries.
