Make the simple sugar by combining 1 cup of water and 1 cup of sugar in a glass measuring cup. Microwave on high until the water starts to boil. Stir to dissolve the sugar and set aside.
While the sugar syrup cools down, squeeze all your lemons. You should end up with about 2 cups of fresh lemon juice. Add lemon juice to a large bowl, and add ¼ cup of the simple syrup and 1 cup of additional water. Stir to combine. Taste and continue to add simple syrup, ¼ cup at a time, and additional water until the lemonade is as sweet or tart as you like.
Pour the lemonade into a 13x9 glass Pyrex dish, cover and freeze. Every hour give the lemonade a stir to prevent large ice crystals from forming. Freeze overnight.
When you’re ready to serve, take a fork and scrape across the top of the frozen lemonade. Scoop a large mound of it into a glass.
