Lemonade

This grown up slushy is refreshing on a hot summer day and you can make it extra special with a splash of club soda or sparkling wine. Keep some on hand in your freezer for those impromptu summer parties!
Ingredients
- 1 cup granulated sugar
- 2 cups lemon juice from 8-10 lemons
- 1 1/2 – 2 cups additional water
Instructions
- Make the simple sugar by combining 1 cup of water and 1 cup of sugar in a glass measuring cup. Microwave on high until the water starts to boil. Stir to dissolve the sugar and set aside.
- While the sugar syrup cools down, squeeze all your lemons. You should end up with about 2 cups of fresh lemon juice. Add lemon juice to a large bowl, and add ¼ cup of the simple syrup and 1 cup of additional water. Stir to combine. Taste and continue to add simple syrup, ¼ cup at a time, and additional water until the lemonade is as sweet or tart as you like.
- Pour the lemonade into a 13×9 glass Pyrex dish, cover and freeze. Every hour give the lemonade a stir to prevent large ice crystals from forming. Freeze overnight.
- When you’re ready to serve, take a fork and scrape across the top of the frozen lemonade. Scoop a large mound of it into a glass.
- If you want to add a little extra something special —-
- For the adults: Add sparkling wine
- For the kiddos: Add sparkling soda
