Blackberry Cobbler

Ingredients

  • 1 stick butter, melted
  • 1-1/4  granulated sugar
  • 1 cup self-rising flour (to make your own self –rising flour, whisk together 1 cup all purpose flour, 1 1/2 teaspoons baking power and 1 teaspoon salt)
  • 1 cup milk (I prefer to use whole milk, but 2% would work great, too)
  • 2 cups blackberries, frozen or fresh (you can also use raspberries, or a combination of blackberries and raspberries)

Instructions

  • Preheat oven to 350 degrees.
  • Butter an oval baking dish (you can also use a round baking dish). In a medium mixing bowl, add 1 cup of sugar and flour. Whisk the sugar and flour together, and then whisk in the milk. Pour in the melted butter and continue to whisk until fully incorporated.
  • If using fresh blackberries, give them a rinse and pat them dry.
  • Pour batter into your buttered baking dish and sprinkle the fruit evenly over the top. Sprinkle remaining sugar over the top.
  • Bake for 45 minutes – 1 hour, until cobbler is golden brown and the fruit is bubbling up on the sides.
  • Serve warm with vanilla ice cream or whipped cream or both!
