1 cup frozen artichoke hearts, chopped into bite size pieces
1 cupfresh spinach leaves (you can also use frozen spinach)
Instructions
Preheat oven to 350 degrees.
In a medium bowl mix together all the ingredients. If using frozen spinach, be sure to thaw it first and wring out all the moisture. You can use a salad spinner, or wrap the defrosted spinach in a clean dishtowel, and, over a bowl, twist the towel to get rid of the excess water.Pour the mixture into a 9-inch pie dish and bake for about 20-30 minutes, until the cheese is melted and the top starts to get golden brown.
Serve with pita chips or, for something extra special, toast sourdough bread and use the dip as a sandwich filling.
