Spinach Artichoke Dip

I always keep the ingredients for this easy dish in my fridge. My kids love it for an after school snack and it's a staple appetizer when guests come over on the weekend. If I want to be extra decadent I toast up some really good sourdough bread and use the dip as a sandwich filling.

Ingredients

  • 1 cup mayonnaise
  • 1 cup Parmesan cheese
  • 1 cup frozen artichoke hearts, chopped into bite size pieces
  • 1 cup fresh spinach leaves (you can also use frozen spinach)

Instructions

  • Preheat oven to 350 degrees.
  • In a medium bowl mix together all the ingredients. If using frozen spinach, be sure to thaw it first and wring out all the moisture. You can use a salad spinner, or wrap the defrosted spinach in a clean dishtowel, and, over a bowl, twist the towel to get rid of the excess water.
    Pour the mixture into a 9-inch pie dish and bake for about 20-30 minutes, until the cheese is melted and the top starts to get golden brown.
  • Serve with pita chips or, for something extra special, toast sourdough bread and use the dip as a sandwich filling.
