Sauted Spinach with Garlic and Pancetta

Crispy, salty pancetta and the kick of garlic take spinach to a whole new tasty level! A perfect side dish for steak, fish or chicken — or top with poached eggs for a fancy breakfast.

Ingredients

  • 1 bag of prewashed spinach
  • 2-4 cloves of garlic, peeled, thinly sliced
  • 2 teaspoons red pepper flakes
  • ¼ cup pancetta, diced½ cup toasted walnuts
  • Olive oil
  • Salt
  • Pepper

Instructions

  • In a large sauté pan, put 2 tablespoons of olive oil and garlic. Turn on heat to medium heat and when the garlic starts to sizzle, add the spinach and sprinkle with the red pepper flakes. Add the pancetta and sauté for about 15 minutes until the spinach is wilted and the pancetta is cooked and crispy.
  • Toss with the walnuts and season with salt and pepper.
