This is my absolute favorite summer tea, and reminds me of childhood Summers spent on the beach, swimming for hours in the ocean, and then cooling off with a large glass of peach tea with mint.
My mom made "sun tea" all the time. Have you ever heard of that? She'd fill a pitcher with water, add a few peach tea bags and then set it in the sun. After a couple of hours, it would turn into "sun tea."
Ingredients
- 2 quarts water
- 4 black tea bags
- 1/4 cup raw sugar
- 2 peaches, sliced
- a handful of fresh mint
- additional peach, sliced (to use as garnish)
Instructions
In a large pot, boil water over high heat. Once boiling, remove from heat.
Pour in sugar and stir until dissolved. Add tea bags and a few sprigs of fresh mint.
Allow tea and mint to steep for about 5-7 minutes, depending on how strong you like your tea.
Remove tea bags and drop in sliced peaches.
Allow tea to absorb peaches for at least 30 minutes and up to 1 hour.
Using a strainer, pour tea into pitcher.
Throw away peach pieces, add a few sprigs of mint.
Cool in refrigerator.
When you're ready to serve it, serve over ice with a slice of peach and a sprig of mint to garnish.
