Peach Tea with Mint

This is my absolute favorite summer tea, and reminds me of childhood Summers spent on the beach, swimming for hours in the ocean, and then cooling off with a large glass of peach tea with mint.

My mom made “sun tea” all the time.  Have you ever heard of that?  She’d fill a pitcher with water, add a few peach tea bags and then set it in the sun.  After a couple of hours, it would turn into “sun tea.”
