Apple Pie Oatmeal

It's like apple pie, but even better because you don't have to worry about making crust! Cinnamon, nutmeg, ginger and apples are all mixed in and cooked with the oatmeal. Top it with toasted pecans, a splash of milk and warm syrup for a perfect, cozy breakfast.

Ingredients

  • 1/2 cup old fashioned rolled oats
  • 1 cup whole milk
  • 1 Honeycrisp or Gala apple cored and seeded, skin on and chopped
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • Maldon salt, a good pinch
  • Optional Toppings: maple syrup brown sugar, toasted pecans, toasted walnuts, a sprinkle of cinnamon

Instructions

  • Add all ingredients to a heavy bottom saucepan (I like using my La Creuset), stir to combine, and bring to a boil.
  • As soon as the mixture starts to boil, turn down the heat and simmer until the oats are fully cooked, about 10-15 minutes.
  • Remove from heat, spoon into a bowl, and top with toasted pecans and a drizzle of maple syrup.
