Kodiak Pancake Recipe (Light & Fluffy!)

Ingredients

  • 1 cup Kodiak Buttermilk pancake mix
  • 3/4 - 1 cup whole milk
  • 1 egg
  • 1 cup blueberries sprinkle in a bit of flour or extra mix to lightly coat the blueberries -- this will prevent them from sinking into the bottom of the batter.
  • 1/2 banana mashed really well and as smooth as you can get it optional
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • butter
  • warm syrup

Instructions

  • In a medium bowl, combine Kodiak mix, milk, egg, banana (if using), cinnamon and cardamom. U
  • A note about the milk. Start with 3/4 cup and if you want the batter thinner, add another 1/4 milk. The thinner the batter the lighter the pancakes will be.
  • Whisk until ingredients are just combined. You want the batter to be smooth, and once it is, stop whisking.
  • Heat a griddle over medium heat, and melt butter. I like to add about 1-2 tablespoons per batch. Using a generous amount of butter is what creates crispy edges that are absolutely delicious!
  • Ladle batter on the skillet in whatever size pancakes you like. Cook until bubbles form on the top, then flip and cook a couple more minutes on the other side. You'll notice both sides get lovely and golden brown.
  • Serve immediately with warm syrup and topped with blueberries.

Notes

Tasty Substitutions and Variations:

  • Banana - My kids used to love bananas when they were little, but not anymore.  However, they will eat a banana if it's hidden in a pancake....lol! Add a mashed banana to the mix - it helps create an even fluffier pancake and your kids won't even know it's there!
  • Blueberries - My personal favorite addition (which might be a bit obvious considering the recipe....lol!) is plenty of juicy blueberries. 
  • Chocolate chunks - It's always a good idea to have a balanced breakfast, right? And my idea of balance is adding chocolate chunks -- they melt in the best way possible and are so good in pancakes!
  • Compote -- Any compote -- strawberry, apple, plum -- takes this recipe from a 10 to a 100! Speaking of strawberries, if you love scones, I've got a fantastic recipe for strawberry scones you'll absolutely love!

  • Toasted pecans -- Fantastic sprinkled on top!
  • Toasted shredded coconut -- also fantastic sprinkled on top!

Extra Tips:

  • To prevent the blueberries from sinking to the bottom, coat them in a bit of flour or extra pancake mix
  • For extra delicious syrup, warm it with a pat of butter
  • For additional sweetness, use an overripe banana -- it's easier to mash and has a higher sugar content.
