Coconut Almond Granola

Nothing tastes better than homemade granola. Nothing. There are many different versions, but this one is my family's favorite. It's nutty and a touch sweet and perfect for a quick, healthy breakfast, an after school snack, or a handful to munch as you head off to bed.

Ingredients

  • 4 cups oats (quick cook or rolled oats)
  • 1 ½ cups almonds
  • 1 cup unsweetened coconut flakes
  • 1 cup raw pumpkin seeds
  • 1 cup raw sunflower seeds
  • 3 tablespoons chia seeds
  • 3 tablespoons golden flaxseed
  • ¾ cup olive oil
  • ¾ cup maple syrup
  • 2 tablespoons ground cinnamon

Instructions

  • Preheat oven to 300 degrees. Add all ingredients to a large bowl and mix well to combine.
  • Pour the mixture onto a large sheet pan and bake for 25 minutes. Toss again to make sure the granola cooks evenly. Cook for another 20 minutes.
  • Let cool and enjoy with yogurt, milk or by the handful.
