Sour cream and fresh dill are great companions to the cucumber in this summer side dish salad. My mom always made this for every backyard party, and I would place heaping spoonfuls on my plate. This salad, to me, is what summer is all about. It's easy, simple, but full of flavor.
Ingredients
- 2 cucumbers, peeled and sliced
- 1 teaspoon kosher salt
- 1 teaspoon white vinegar
- 1/2 cup mayonnaise
- 1 cup sour cream
- 1-3 tablespoons chopped fresh dill
- Freshly ground black pepper
Instructions
Place the cucumbers in a glass bowl. Sprinkle them with salt and vinegar. Cover and let stand for 30 minutes. You can also let them sit like this in the fridge overnight.
Pour off the excess liquid and drain in colander for about 30 minutes to allow complete drainage.
Add the mayonnaise, sour cream, dill and pepper, and mix well.
Cover and refrigerate until serving time.
This is the perfect side dish to serve with salmon, steak or grilled chicken.
