Cold Cucumber Salad

Sour cream and fresh dill are great companions to the cucumber in this summer side dish salad. My mom always made this for every backyard party, and I would place heaping spoonfuls on my plate. This salad, to me, is what summer is all about. It's easy, simple, but full of flavor.

  • 2 cucumbers, peeled and sliced
  • 1 teaspoon kosher salt
  • 1 teaspoon white vinegar
  • 1/2 cup mayonnaise
  • 1 cup sour cream
  • 1-3 tablespoons chopped fresh dill
  • Freshly ground black pepper


  • Place the cucumbers in a glass bowl. Sprinkle them with salt and vinegar. Cover and let stand for 30 minutes. You can also let them sit like this in the fridge overnight.
  • Pour off the excess liquid and drain in colander for about 30 minutes to allow complete drainage.
  • Add the mayonnaise, sour cream, dill and pepper, and mix well.
  • Cover and refrigerate until serving time.
  • This is the perfect side dish to serve with salmon, steak or grilled chicken.
