Don't let the simple preparation fool you --- a little olive oil, a dash of red pepper flakes and a sprinkle of salt and pepper enhance the roast flavor of the zucchini.
- 2 green zucchini
- 2 yellow zucchini
- Olive oil
- Red Pepper Flakes
Heat oven to 450 degrees Fahrenheit.
Slice the zucchinis diagonally into 1/2 pieces. Spread the zucchini slices on a sheet pan and drizzle generously with olive oil, a generous pinch of red pepper flake and a pinch (or two) of salt and pepper. Using your hands, or a wooden spoon, toss the zucchini to coat.
Roast until zucchini starts to brown and soften, about 15 – 20 minutes.
Drizzle with some of the sweet chili sauce because….well, why not?
