Couscous with Peas and Tarragon

Ingredients
- 1 box of couscous, small (you can also use the larger Israeli couscous)
- 5 tablespoons of butter
- 3- 4 tablespoons of lemon juice
- Grated zest of 1 lemon
- 1 tablespoon of tarragon
- 1 cup fresh peas
Instructions
- In an glass measuring cup, soften butter in the microwave, and then stir in some lemon juice, grated lemon zest, and chopped tarragon, and season with salt and pepper. Set aside.
- In a medium pot, prepare couscous according to package directions, adding peas.After the couscous is cooked, and before fluffing it, add the seasoned butter, then fluff with a fork to combine.Cover and let sit a few additional minutes.
