Adding a hint of Tarragon works perfect with peas
Ingredients
- 1 box of couscous, small (you can also use the larger Israeli couscous)
- 5 tablespoons of butter
- 3- 4 tablespoons of lemon juice
- Grated zest of 1 lemon
- 1 tablespoon of tarragon
- 1 cup fresh peas

In an glass measuring cup, soften butter in the microwave, and then stir in some lemon juice, grated lemon zest, and chopped tarragon, and season with salt and pepper. Set aside.

In a medium pot, prepare couscous according to package directions, adding peas.
After the couscous is cooked, and before fluffing it, add the seasoned butter, then fluff with a fork to combine.
Cover and let sit a few additional minutes.
