Couscous with Peas and Tarragon

  • 1 box of couscous, small (you can also use the larger Israeli couscous)
  • 5 tablespoons of butter
  • 3- 4 tablespoons of lemon juice
  • Grated zest of 1 lemon
  • 1 tablespoon of tarragon
  • 1 cup fresh peas


  • In an glass measuring cup, soften butter in the microwave, and then stir in some lemon juice, grated lemon zest, and chopped tarragon, and season with salt and pepper. Set aside.
  • In a medium pot, prepare couscous according to package directions, adding peas.
    After the couscous is cooked, and before fluffing it, add the seasoned butter, then fluff with a fork to combine.
    Cover and let sit a few additional minutes.
