Mango Pineapple Salsa

This mango pineapple salsa is like taking a trip to a tropical island…..but without the jet lag!

Between the mango and pineapple, the bite from the red onion and jalapeño, and the pop from lime juice and cilantro…..it’s sunshine in a dish!

Scoop it on tacos (like these mahi mahi tacos) or serve it as a tasty appetizer with your favorite chips!

I HIGHLY recommend making this a few hours before serving.  That way all the flavors have a chance to blend together which creates BIG flavor!

Ingredients

  • 1 ripe mango, peeled, cored and diced small (about 2 cups)
  • 1 cup diced pineapple
  • ½ cup minced red onion
  • 1 jalapeno pepper, seeded and minced
  • 3 tablespoons lime juice
  • 3 tablespoons chopped cilantro
  • Salt, to taste

Instructions

  • Mix together all of the ingredients and season with salt, to taste. Serve with your favorite tortilla chips. The salsa can be stored in an airtight container in the refrigerator for up to 2 days.
