THE ONLY GUACAMOLE RECIPE YOU’LL EVER NEED

Yep.  I promise you this is absolutely the ONLY guacamole recipe you'll ever need.

This is THE ONE.

It's easy.  It uses ingredients you already have.  And, most important of all.....it's so. dang. good.

This recipe highlights the creamy avocadoness (ok, not a word, but it should be) of the avocado.

Only 5 ingredients let the avocado shine, like the star it is.

And, I do happen to know a little thing, or two, about avocados.  It's in my genes.  Literally.

Over 100 years ago my great-grandfather settled on a citrus and avocado ranch in southern California.   It's still in the family today, and is where my dad grew up.  It's the same ranch I visited growing up.    And where my brother and I, and our cousins, would venture into the grove, picking avocados straight from the tree.   Sometimes we'd simply put them on toast with a little mayo and salt (now, I'm not going to say we invented avocado toast........but.....let's just say I've known how awesome it is for a very loooooong time).  Other times we'd just slice the avocados open, grab a spoon and eat straight from the skin.

But most of the time the avocados became guacamole.

We'd serve the guac up with chips, or alongside homemade tamales.

Now, there are LOADS of variations for making guacamole, but I love to use simple basic ingredients.  Fresh avocado has a buttery, mellow flavor that can easily get lost when you add a ton of stuff.  Most of the time keeping it simple is the way to go.

Step #1

Take out your mortar and pestle.   No m & p?  You can use a food processor for this step, too.  Peel the garlic and rough chop it.  Add it to the m & p along with a pinch of salt.  Mash the garlic and salt together until a paste forms.  Why a paste and not just mince the garlic?  The paste adds the garlic flavor without having to worry about biting down on a piece of garlic.  If you like it super garlicky, add an extra clove.

Step #2

Cut the avocado in half, remove the pit, and scoop out the flesh into a small bowl.

Step #3

Add the mashed garlic/salt to the avocado.  Squeeze in the juice from 1/2 a lemon.  Add 2-3 drops of hot sauce.  Use a fork to mash everything together.  Mash it until it's the consistency you like.  I like leaving chunks, but if you prefer something smoother, keep on mashing!

Ingredients

  • avocado, halved, pit removed
  • 1-2 garlic cloves, peeled, roughly chopped
  • a generous pinch of salt
  • Juice of 1/2 lemon
  • 2-3  drops   of hot sauce   (I use either Tabasco or Sriracha)

Instructions

  • Add chopped garlic and one pinch of salt to mortar and pestle or food processor. Mash until it forms a paste.
  • Scoop out flesh of avocado and add to small bowl.
  • Add the mashed garlic paste, lemon juice and hot sauce to the avocado.
  • Using a fork, mash until it's the consistency you like.
  • Taste to see if you need to adjust the seasoning -- add more salt or lemon juice if you like
  • Serve with chips, enchiladas, tacos, nachos, burritos.....or just eat it with a spoon.
