Ingredients

  • Almond crusted chicken (click below for the recipe)
  • Cheese  (Cheddar, Swiss or Brie)
  • Lettuce  (or Spinach for an extra healthy addition)
  • Mayonnaise
  • Mustard
  • Flatbread  (you can also use pita bread or your child’s favorite sandwich bread)
  • Red Bell Pepper
  • Yellow Bell Pepper

Instructions

  • I’m a huge fan of using leftovers in my kid’s lunches. Make a double helping of our Almond Crusted Chicken and use the extra chicken to make a delicious wrap the next day for lunch.  
  • Take a piece of flatbread and spread it with mayonnaise and mustard. Slice a piece of the chicken into 3-4 slices and lay the chicken on top of the flatbread. Place a few lettuce (or spinach) leaves on top, a couple of slices of red and yellow pepper and roll up the flatbread. You can leave it in one large piece, or cut the flatbread in half.
  • An apple, or other fresh fruit, completes this easy and healthy school lunch.
