Penne All’Arrabbiata, Herb Garlic Bread

You can easily adjust the heat in this dish by adding more red pepper flakes.  It's the perfect late night dish when you've had a long afternoon and evening of sports/kids activities/work/fill in the space, and really don't feel like cooking.  This is the dish for you.

Ingredients

  • Pinch of Sugar
  • 1 pound dried penne
  • 1 15 ounce  can of chopped or crushed tomatoes
  • 3 tbsp  olive oil
  • half an onion, chopped
  • 1 garlic clove, chopped
  • 1 tsp  red pepper flakes
  • salt and black pepper
  • grated parmesan, to garnish

Instructions

  • In a saucepan, gently cook the onion and garlic in the olive oil until the onion has softened. Add the crushed tomatoes, red pepper flakes and sugar.
  • Season with salt and pepper and simmer for 25-30 minutes until thickened.
  • Meanwhile, cook the pasta in plenty of salted water until cooked 'al dente', and then drain the pasta.  Reserve 1/2 cup water in the sauce needs to be thinned.
  • Add the pasta to the sauce and mix in well.
  • Sprinkle with grated parmesan and serve immediately.
