You can easily adjust the heat in this dish by adding more red pepper flakes. It's the perfect late night dish when you've had a long afternoon and evening of sports/kids activities/work/fill in the space, and really don't feel like cooking. This is the dish for you.
Ingredients
- Pinch of Sugar
- 1 pound dried penne
- 1 15 ounce can of chopped or crushed tomatoes
- 3 tbsp olive oil
- half an onion, chopped
- 1 garlic clove, chopped
- 1 tsp red pepper flakes
- salt and black pepper
- grated parmesan, to garnish
Instructions
In a saucepan, gently cook the onion and garlic in the olive oil until the onion has softened. Add the crushed tomatoes, red pepper flakes and sugar.
Season with salt and pepper and simmer for 25-30 minutes until thickened.
Meanwhile, cook the pasta in plenty of salted water until cooked 'al dente', and then drain the pasta. Reserve 1/2 cup water in the sauce needs to be thinned.
Add the pasta to the sauce and mix in well.
Sprinkle with grated parmesan and serve immediately.
