Peach Compote --- this versatile compote gives an added boost to anything you put it on. Sweet summer peaches are cooked down with a little sugar, cinnamon, vanilla and lemon juice. My favorite thing to put it on? Vanilla ice cream, for the perfect summer dessert.
Ingredients
- 4 peaches, peeled and cut into large chunks
- 1 tablespoons sugar
- ¼ teaspoon vanilla extract
- Ground cinnamon
- ½ teaspoon freshly squeezed lemon juice
Instructions
In a small pot, over medium heat, combine the peaches, sugar, vanilla extract, a sprinkle of cinnamon and the lemon juice. Stir to make sure the ingredients are well combined. Bring to a simmer, and simmer until the mixture thickens and the peaches start to break down, about 15 minutes. Taste and, if you like, season with more cinnamon or an extra bit of lemon juice.
I like my compote with chunky bits of peaches, but if you like your compote more broken down and jam like, then continue simmering until it reaches the consistency you like.
This compote is perfect for serving over waffles or pancakes, top your ice cream with it, serve it with biscuits, or eat it by the spoonful!
